Spinach and Feta Flatbread Pizza

Ingredients
  

  • 1 flatbread
  • 1 cup shredded mozzarella cheese whole-milk preferred
  • 0.25 tsp garlic powder
  • 0.125 tsp ground black pepper
  • 0.5 cup fresh spinach torn
  • 0.5 cup red onion thinly sliced
  • 3 garlic cloves thinly sliced
  • 0.5 cup crumbled feta cheese block feta crumbled by hand preferred
  • 0.25 tsp sea salt for finishing
  • 1 tbsp extra virgin olive oil for drizzling after baking

Method
 

  1. Preheat your oven to 450°F and place a pizza stone or baking sheet inside while it heats up.
  2. Spread shredded mozzarella evenly over the flatbread surface. Sprinkle with garlic powder and black pepper.
  3. Evenly distribute torn fresh spinach, sliced red onion, and sliced garlic over the mozzarella layer.
  4. Top with crumbled feta cheese, distributing it evenly across the entire surface.
  5. Carefully place the assembled flatbread onto the preheated stone or baking sheet. Bake for 10 to 12 minutes until the cheese is melted and bubbling and the edges are golden with slightly charred spots.
  6. Remove from the oven and immediately drizzle lightly with olive oil and sprinkle with sea salt. Let cool for 2 to 3 minutes before slicing.

Notes

For a crispier crust, pre-bake the flatbread for 3 to 4 minutes before adding toppings. Do not overload with toppings to prevent a soggy texture. Store leftovers in the refrigerator for up to 3 days. Reheat in a skillet over medium heat or in a 375°F oven for best texture.
