High Protein Caesar Dressing with Cottage Cheese

Ingredients
  

  • 1 cup cottage cheese drained if watery; full-fat recommended for creamiest result
  • 1/4 cup grated Parmesan cheese finely grated for smoothest blend
  • 1-2 cloves garlic minced; fresh garlic recommended for boldest flavor
  • 2 tbsp fresh lemon juice
  • 1 tsp Dijon mustard
  • 1 tsp Worcestershire sauce use certified gluten-free brand if needed
  • 1/4 tsp salt adjust to taste
  • 1/4 tsp freshly cracked black pepper
  • 1 tsp anchovy paste optional, for classic Caesar depth
  • 1 tbsp capers optional, vegetarian alternative to anchovy paste
  • 1-2 tbsp water or milk optional, to thin consistency if needed

Method
 

  1. Add cottage cheese to a blender or food processor and blend for about 60 seconds until fully smooth with no lumps. Scrape down the sides and blend again if needed.
  2. Add grated Parmesan, minced garlic, fresh lemon juice, Dijon mustard, Worcestershire sauce, salt, and black pepper. Blend until fully combined and velvety smooth.
  3. If using optional add-ins, add anchovy paste or capers and pulse a few times to combine without over-blending.
  4. Check consistency. If too thick, add 1 to 2 tablespoons of water or milk and blend briefly until pourable.
  5. Taste and adjust salt, pepper, or lemon juice as needed. Transfer to a glass jar or airtight container and refrigerate for at least 30 minutes before serving to allow flavors to fully develop.

Notes

Drain cottage cheese well before blending if watery. For ultra-smooth texture, strain finished dressing through a fine mesh sieve before chilling. Store in the fridge for up to 5 days. Stir or shake before each use and add a small splash of water if it has thickened. Make a double batch at the start of the week for easy meal prep.
