Ground Turkey Sweet Potato Bake

Ingredients
  

  • 3 medium sweet potatoes about 1.5 lbs, peeled and diced into bite-sized pieces
  • 1 medium onion chopped
  • 1 large bell pepper chopped, any color
  • 2 cups fresh spinach roughly chopped
  • 1 lb lean or extra-lean ground turkey
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp cumin
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil divided
  • 1/2 cup shredded cheddar cheese optional

Method
 

  1. Preheat oven to 400 degrees F. Peel and dice sweet potatoes into bite-sized pieces. Chop onion, bell pepper, and spinach.
  2. Toss diced sweet potatoes with 1 tablespoon olive oil, paprika, garlic powder, onion powder, salt, and pepper. Spread in a single layer on a baking sheet. Roast for 20 to 25 minutes until golden brown and fork-tender.
  3. Heat remaining tablespoon of olive oil in a large skillet over medium heat. Add onion and bell pepper and cook for 3 to 4 minutes until softened. Add ground turkey and cook for 6 to 8 minutes, breaking apart, until fully browned. Season with cumin, salt, and pepper.
  4. In a baking dish, layer roasted sweet potatoes, then the turkey mixture, then spinach. Top with shredded cheddar cheese if using.
  5. Bake at 400 degrees F for 10 to 15 minutes until cheese is melted and bubbly and spinach is wilted. Garnish with fresh parsley or cilantro and serve warm.

Notes

Do not crowd sweet potatoes on the baking sheet or they will steam instead of roast. Skip cheese or use dairy-free alternative for a dairy-free version. Doubles well for meal prep. Freezes for up to 3 months.
