- Preheat oven to 350 degrees F. Line a standard loaf pan with parchment paper and set aside.
- Add cottage cheese to a blender and blend until completely smooth with no visible curds. Add eggs and olive oil and blend again until fully combined.
- Add oat flour, baking powder, salt, and any optional seasonings. Blend briefly just until incorporated. Do not overmix. Batter should be thick but pourable.
- Pour batter into the prepared loaf pan and smooth the top. Bake uncovered for 40 to 50 minutes until golden brown on top and a toothpick inserted in the center comes out clean. If browning too quickly, loosely tent with foil after 30 minutes.
- Cool in the pan for 10 minutes then transfer to a wire rack. Allow to cool completely before slicing to prevent crumbling.
Notes
Always blend cottage cheese until fully smooth before combining with other ingredients. Use full-fat cottage cheese for the best moisture and structure. Cool the loaf completely before slicing. Store in an airtight container in the refrigerator for up to 5 days or freeze individual slices for up to 1 month. Reheat in a toaster oven or air fryer at 350 degrees F.
