Ingredients
  

  • 1 cup full-fat cottage cheese blended completely smooth
  • 3 large eggs
  • 1/2 cup oat flour or almond flour for lower carb option
  • 1 tsp baking powder use fresh for best lift
  • 1/2 tsp salt
  • 1 tbsp olive oil or melted butter
  • 1/2 tsp garlic powder optional
  • 1 tsp Italian seasoning optional
  • 1 tbsp chopped fresh chives optional

  • Standard loaf pan
  • Parchment paper
  • Wire cooling rack

Method
 

  1. Preheat oven to 350 degrees F. Line a standard loaf pan with parchment paper and set aside.
  2. Add cottage cheese to a blender and blend until completely smooth with no visible curds. Add eggs and olive oil and blend again until fully combined.
  3. Add oat flour, baking powder, salt, and any optional seasonings. Blend briefly just until incorporated. Do not overmix. Batter should be thick but pourable.
  4. Pour batter into the prepared loaf pan and smooth the top. Bake uncovered for 40 to 50 minutes until golden brown on top and a toothpick inserted in the center comes out clean. If browning too quickly, loosely tent with foil after 30 minutes.
  5. Cool in the pan for 10 minutes then transfer to a wire rack. Allow to cool completely before slicing to prevent crumbling.

Notes

Always blend cottage cheese until fully smooth before combining with other ingredients. Use full-fat cottage cheese for the best moisture and structure. Cool the loaf completely before slicing. Store in an airtight container in the refrigerator for up to 5 days or freeze individual slices for up to 1 month. Reheat in a toaster oven or air fryer at 350 degrees F.
