Ingredients
  

  • 1 cup cottage cheese Full-fat recommended for the creamiest texture
  • 0.5 cup cheddar cheese, shredded Shred from a block for best melt. Mild for smooth dip or sharp for more bite.
  • 0.5 tsp taco seasoning Use mild or spicy blend based on preference

Method
 

  1. Add 1 cup of cottage cheese to a single-serve blender. Blend on high for 30 to 60 seconds until completely smooth with no visible curds.
  2. Transfer the blended cottage cheese to a microwave-safe bowl. Top evenly with shredded cheddar cheese and taco seasoning.
  3. Microwave on high for 2 minutes. Remove and stir well to combine the melted cheese throughout.
  4. Return to the microwave in 30-second intervals, stirring after each one, until the queso is fully smooth and creamy. This takes about 2 additional minutes total depending on your microwave.
  5. Garnish with pico de gallo, salsa, or fresh cilantro if desired. Serve immediately with tortilla chips while hot.

Notes

Use a single-serve blender for the smoothest texture. Avoid immersion blenders. Store leftovers in the fridge for up to 3 days. Reheat in 30-second microwave intervals, stirring between each one. Add a small splash of water or milk if the dip thickens too much after refrigerating.
