Ingredients

  • 1 lb ground chicken fresh preferred for best texture
  • 1/2 cup Parmesan cheese finely grated, freshly grated preferred
  • 1 large egg
  • 1/2 tsp garlic powder
  • 1 tsp Italian seasoning
  • Kosher salt and freshly ground black pepper to taste
  • 1/2 cup marinara or pizza sauce use a thicker sauce to avoid soggy crust
  • 4 oz fresh mozzarella cheese sliced
  • 1 large tomato sliced
  • fresh basil leaves for garnish

Equipment

  • Pizza pan or baking sheet
  • Parchment paper
  • Large mixing bowl

Method

  1. Preheat oven to 425°F (220°C). Line a pizza pan or baking sheet with parchment paper.
  2. In a large mixing bowl, combine the ground chicken, Parmesan, egg, garlic powder, Italian seasoning, salt, and pepper. Mix thoroughly until evenly combined.
  3. Transfer the mixture to the prepared pan and press into a round, even circle about 1/4-inch thick. Keep edges slightly thicker so they hold up during baking.
  4. Bake the crust for 30 minutes, or until the edges are golden brown and the center is fully cooked through.
  5. Remove from oven. Spread marinara sauce evenly over the top, then layer with mozzarella slices, tomato rounds, and fresh basil.
  6. Return to oven for 5 more minutes, until the cheese is melted and bubbling.
  7. Let cool for 3 to 5 minutes before slicing. Garnish with extra basil if desired and serve warm.

Notes

Reheat leftovers in the oven or air fryer at 375°F for 5 to 8 minutes to maintain crust crispiness. Avoid the microwave. The plain crust can be baked ahead and refrigerated for up to 3 days for easy meal prep.
