Ingredients
  

  • 1 lb ground beef 80/20 blend recommended
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1 tbsp olive oil
  • 4 cups shredded lettuce iceberg or romaine
  • 1/2 cup dill pickle chips
  • 1/2 cup chopped onion optional
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup mayonnaise for the tangy sauce
  • 2 tbsp ketchup use low-sugar for keto
  • 1 tbsp yellow mustard
  • 1 tsp apple cider vinegar
  • 1/2 tsp smoked paprika
  • 1/4 tsp onion powder

Method
 

  1. In a small bowl, whisk together the mayonnaise, ketchup, mustard, apple cider vinegar, smoked paprika, and onion powder until smooth. Cover and refrigerate.
  2. In a medium bowl, combine the ground beef with salt, pepper, and garlic powder. Mix until just incorporated.
  3. Heat olive oil in a large skillet over medium-high heat. Add the seasoned beef and cook, breaking it into small crumbles, for 6 to 8 minutes until fully browned. Drain off all excess grease.
  4. Divide the shredded lettuce evenly among four bowls. Spoon the hot cooked beef over the greens.
  5. Top each bowl with shredded cheddar, pickle chips, and chopped onion. Drizzle generously with the tangy sauce and serve immediately.

Notes

For strict keto, use a low-sugar ketchup alternative. Swap ground beef for ground turkey or chicken if preferred. Store all components separately for meal prep. Keeps fresh in the fridge for up to 4 days.
