Ingredients

  • 1 lb ground beef 80/20 blend recommended
  • 4 large flour tortillas burrito-size preferred
  • 1/2 cup Thousand Island dressing for the special sauce
  • 1/2 cup shredded lettuce iceberg recommended
  • 1/2 cup chopped pickles
  • 1/4 cup diced onions
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1 tbsp olive oil for toasting
  • salt and pepper to taste

Equipment

  • Large skillet
  • Small mixing bowl
  • Cutting board
  • Tongs

Method

  1. Heat a skillet over medium heat. Add the ground beef and cook, breaking it apart with a spoon, for 5 to 7 minutes until fully browned and no pink remains. Drain excess grease.
  2. Season the cooked beef with salt and pepper. Remove from heat and set aside.
  3. In a small bowl, mix the Thousand Island dressing with a pinch of salt and pepper until smooth. This is your special sauce.
  4. Lay the tortillas flat on a clean surface. Spread a spoonful of special sauce in the center of each tortilla.
  5. Layer the cooked beef, shredded lettuce, chopped pickles, diced onions, cheddar, and mozzarella evenly over each tortilla.
  6. Fold in the sides of each tortilla and roll tightly from one end to the other. Keep the filling snug so it holds together.
  7. Heat olive oil in a clean skillet over medium heat. Place each wrap seam side down and cook for 2 to 3 minutes per side until golden brown and crispy.
  8. Remove from the skillet, slice each wrap in half diagonally, and serve immediately.

Notes

Substitute ground beef with ground turkey or chicken for a leaner option. Add hot sauce to the Thousand Island dressing for extra heat. Store components separately for meal prep and assemble fresh. Keeps in the fridge for up to 2 days. Freeze individually wrapped in foil for up to 1 month.
